❁Raw Pesto Pasta❁
Are you looking for healthy lunch or dinner meal ideas but aren't too sure where to start? Well I've got you covered with this super easy and nourishing recipe. You have most likely enjoyed a plate of pesto pasta before, maybe you even have it three days every week. I know that it has a very special place in my heart. I have always loved pasta but it's not usually the healthiest option. Luckily, I have created this delicious recipe which is packed full of nutrients, and is meat, dairy, egg, & gluten free. This meal is fully raw, so no cooking is needed, and is very filling. It's great for lunch & dinner, and can easily be packed into a container when you're hungry on the go.
~My Simple Recipe~
What you need: •1 zucchini (only need 1/2 for 1 serving of pasta), turned into 'zoodles' (A.K.A. zucchini noodles) using a 'spiralizer' (tool shown in image below).
•1 tomato, diced.
•3 large handfuls fresh basil, rinsed & stems chopped (extra leaves to serve). •8 tbsp virgin olive oil. •1/2 cup raw walnuts. •2 cloves garlic, outer skin removed. •5 tbsp nutritional yeast/ savoury yeast flakes. •2 tbsp hemp seeds (optional- have a nice nutty flavour and are packed full of omegas). •Juice of 1 lime.
What to do:
1. Blend the following ingredients in a food processor, until ground up and has a smooth but thick consistency- basil, olive oil, walnuts, garlic, nutritional yeast, hemp seeds, and lime juice.
2. Gently combine the zoodles and creamy pesto together in a bowl.
3. Serve up your pesto pasta onto a plate.
4. Add diced tomato and a few basil leaves on top as a garnish.
