Just found this recipe I made last year... I'll come up with a better version soon.
Makes 2 full jars
-1 cup almonds
-1/4 cup water
-1/4 cup chia seeds
-1/2 cup sunflower seeds
-1/2 cup shredded coconut
-1 tsp cinnamon
-1/2 cup coconut oil, melted
-1/4 cup coconut sugar
Soak the almonds in hot water for 5-7 minutes. Strain before adding them to a food processor and blend on the 2nd mode.
Blend on the 3rd mode for 3-5 minutes, occasionally stopping to scrape down the sides with a spatula. Add the water gradually throughout this process.
Blend in chia seeds, sunflower seeds, coconut, and cinnamon. Combine ¼ cup of the coconut oil with the other ingredients with the dial on 5. Add in the other ¼ cup and blend for 20 seconds before adding in the coconut sugar.
Scoop mixture into two jars and store in the fridge. You could spread the almond butter on toast or eat it with sliced fruit and nuts.
