Here is my simple guide to making quick and easy sweet treats that will last you all through the upcoming week!
To re-create these delicious bars, you will need a high speed blender or food processor.
In parts Blend:
2 cups cashews
1/2 cup shredded coconut
Then blend in:
1 sachet raw frozen pink Pitaya, 100g
1 cup dates, soaked (I always soak them in hot water for around 5 minutes, then ensure that the water is drained off)
And finally blend in:
2 cups shredded coconut
Press the mixture into a lined baking tin
Melt 90% dark chocolate (dairy free) or if that’s too rich find a vegan “milk” or another dark chocolate that you like!
Coat/ spread over the top
Set in the fridge or freezer
Slice into bars, eat and enjoy throughout your week, store the bars in the freezer and pull them out when feeling peckish (:
